GRO Mushroom Toast with Garlic Butter

A warm, savoury toast piled high with golden mushrooms, garlic, and fresh herbs — perfect for brunch or a light supper.
Ingredients

2 slices good sourdough, toasted
500g Mushrooms, sliced (Oysters, Shitake, chestnut)
2 cloves garlic, finely chopped
1 tbsp olive oil or butter
A squeeze of lemon
Fresh herbs (parsley, chives, thyme)
Salt & black pepper
Optional: chilli flakes, a spoon of ricotta, or shaved parmesan
Method
Toast the sourdough until golden and crisp.
Heat oil or butter in a pan, .Add the mushrooms and sauté until browned and juicy.
add the garlic, Rosmary and cook until fragrant
Season with salt, pepper, and a squeeze of lemon.
Pile the mushrooms high on the sourdough.
Finish with the fresh herbs and optional toppings.
