GRO Mushroom Toast with Garlic Butter

A warm, savoury toast piled high with golden mushrooms, garlic, and fresh herbs — perfect for brunch or a light supper.


Ingredients

  • 2 slices good sourdough, toasted

  • 500g Mushrooms, sliced (Oysters, Shitake, chestnut)

  • 2 cloves garlic, finely chopped

  • 1 tbsp olive oil or butter

  • A squeeze of lemon

  • Fresh herbs (parsley, chives, thyme)

  • Salt & black pepper

  • Optional: chilli flakes, a spoon of ricotta, or shaved parmesan




Method


Toast the sourdough until golden and crisp.


Heat oil or butter in a pan, .Add the mushrooms and sauté until browned and juicy.


add the garlic, Rosmary and cook until fragrant


Season with salt, pepper, and a squeeze of lemon.


Pile the mushrooms high on the sourdough.


Finish with the fresh herbs and optional toppings.
