Stir‑Fried GRO Mushrooms with Veg, Soy & Ginger

400g GRO Mushrooms (oyster, lion’s mane, or mix), sliced

1 carrot, thinly sliced

200g broccoli or greens

2 garlic cloves, minced

1 tbsp fresh ginger, grated

2 tbsp soy sauce

1 tbsp rice vinegar or lemon juice

1 tsp sesame oil (optional)

1 tbsp oil for frying

400g cooked rice


Instructions

1 Prep the baseCook your rice and set aside. Slice mushrooms and vegetables.

2 Sauté aromatics Heat oil in a pan, add garlic and ginger, and cook until fragrant.

3 Add mushrooms Stir‑fry mushrooms on high heat until lightly browned.

4 Add vegetables Toss in carrots and greens; cook until crisp‑tender.

5 Season Add soy sauce, vinegar/lemon, and sesame oil. Stir to coat.

ServeSpoon over warm rice and finish with herbs, chilli flakes, or spring onion
